Nuts and Bolts

I received a whole bunch of recipes from a friend and this was one of them. It is a favorite of our family!

Ingredients

2 cups rice chex
1 cup nuts
1 Tbsp. garlic salt
1 cup cheerios
1/4 cup butter
1 Tbsp. onion salt
2 cups pretzel sticks
1 tsp. Worcestershire

Directions

Melt butter and add seasonings. Mix throuroughly. Bake in 250 degree oven for 2 hours stirring every 15 minutes.

Pizza Rolls

I haven’t tried these yet, as I had lost the recipe until recently.  But, these may just go on our menu for next week.

The Ingredients

4 cups shredded pizza cheese
1 pound bulk Italian sausage, cooked and drained
6 ozs. pepperoni, chopped
1 medium green pepper, finely chopped
1 medium sweet pepper, finely chopped
1 medium onion, finely chopped
2 jars (14 ozs. each) pizza sauce
32 egg roll wrappers
Vegetable oil for frying
Additional pizza sauce for dipping

Directions

In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal. In an electric skillet, heat 1 inch of oil to 375 degrees. Fry pizza rolls for 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve with additional pizza sauce if desired.

Yields: 32 rolls

I saw Jackie talking about these on Facebook awhile back and thought they sounded great. She was kind enough to share the recipe with me. If you want to check out her fantastic blog please visit Literary Escapism

Here’s the recipe:

Ingredients:

1 pkg brownie mix + ingredients for cake-like brownies
2 bananas, mashed
1/2 cup dry roasted peanuts

Directions:

Preheat the oven to 350 degrees F. Chop the peanuts using a food chopper.
In a bowl, mix together the bananas, oil, eggs and water (which is required for the brownie mix). Mix (or blend) until everything is smooth and then add the brownie mix. Mix (or blend) until everything is smooth again and then mix in the peanuts.

Spoon out the batter into the mini-muffin pan until each slot is 3/4 full.
Bake for 13 minutes.

Yield: about 6 dozen brownie bites

Variation: Substitute pretzels for the bananas. I haven’t tried this yet, but I am so going to.

We made these yesterday and they are delicious! I will be making the prezel variety today to see how these turn out. My family loved these and I also like the size as they are perfect for my little ones to snack on. An, a lot less messy than a regular brownie. Yummy!

Beef and Sundried Tomato Roll Ups

1/2 lb. thinly sliced roast beef
1/2 cup light cream cheese with roasted garlic, softened
1/2 cup purchased oil-packed sun dried tomato spread

Spread each slice of beef with cream cheese. Carefully spread each with sundried tomato spread. Roll up each slice tightly; place on a cookie sheet. Cover; refrigerate for at least 1 hour or until firm. To serve, cut each roll into 4 pieces. Secure each with cocktail toothpick.
